Ingredients
- 115 g of coconut flour
- ¼ cup melted coconut oil
- 1 cup of coconut milk
- Lemon peel or vanilla extract
- The juice of a lemon
- 4 tablespoons maple syrup
- A pinch of salt
- 1 teaspoon baking powder
- 1 teaspoon of baking soda
- 1 egg
Preparation
Start by preheating your oven to 180 degrees then cover a baking sheet with parchment paper.
Then mix the coconut oil, coconut milk, lemon juice, lemon zest or vanilla extract, egg and maple syrup in a large bowl.
Take another bowl, then mix the previously sifted coconut flour, baking powder, baking soda and salt.
Then add your flour mixture to your first preparation by incorporating it little by little to avoid lumps. You will get a dough that you divide into little balls.
Place your dough balls in your baking sheet and flatten them with your hand or the bottom of a glass.
Bake for 12 to 15 minutes at 180 degrees until the edges of your cookies are lightly browned.
